Ingredients:

  • 2 cup gluten-free rice flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 3 large eggs

  • 1/2 cup olive oil

  • 1/2 cup plain Greek yogurt

  • 1 1/2 cups grated carrots

  • 1/2 cup grated Mimolette cheese

  • 1/2 coconut milk

  • 1/2 nuts, bay leaves

Instructions:

  1. Preheat the oven to 175°C/340°F

  2. In a large mixing bowl, whisk together the rice flour, baking powder, salt, and black pepper.

  3. In a separate mixing bowl, beat the eggs until frothy. Add in the olive oil, Greek yogurt,  and whisk until well combined.

  4. Pour wet ingredients into dry ingredients and stir until just combined.

  5. Stir in grated carrots, grated Mimolette cheese, nuts and stir until well distributed.

  6. Pour the batter into the prepared baking jars and smooth the top with a spatula.

  7. Bake for 30 to 35 minutes, or until a toothpick inserted in the center of the cake comes out clean.

  8. Let the cake cool in the baking dish for 5-10 minutes before slicing and serving.
